You’ll love D’s Homemade Spaghetti Sauce because it’s healthy & full of flavor!

Homemade means there’s no need for plastic jars or throw away containers. When you use your reusable grocery bags and get your meat wrapped in butcher paper you create less waste.

Yield: 2 large mason jars of sauce / 8 generous servings (9X13″ LASAGNA + 1 LARGE JAR)

Ingredients:
For Blender
  • 13 small-medium Tomatoes or 10c of roughly chopped tomatoes. (I love Roma, but heirlooms are great! I’ve also used golden cherry tomatoes, and it’s delicious!)
  • 1/4c sun-dried tomatoes (they have them in bulk sometimes but I’ve also bought them in a bag.  You don’t want the ones in a can or jar because they are soaked in oil.)
  • 1/2c pitted dates
  • 3Tbl extra virgin olive oil
  • 1 medium jalapeño *optional
  • filtered water to thin if needed
For Saute’
  • 1 large sweet onion (or whatever species is local and available)
  • 6 medium to large cloves of garlic finely chopped
  • 1 large bell pepper, or 2 large summer squash or zucchini *these are interchangeable for diet restrictions
  • Chop and add your favorite vegetables. *Meat options: 2lbs of chicken sausage; one spicy and one sweet, ground beef, turkey and seitan.
Seasonings:
  • 1/4c dried parsley, 3/4c if fresh
  • 1TBS dried oregano, 3Tbl if fresh
  • 1TBS dried basil, 3Tbl if fresh
  • 3 Bay leaves
  • 1TBS brown sugar *optional, or 1TBS coconut or raw sugar + 1TBS Black-strap Molasses
  • Sea Salt and Fresh cracked pepper to taste
Directions:
  1. Dice vegetables for sauté and set aside.  Quarter tomatoes, roughly chop jalapeño and remove pits from dates for blender.
  2. If using meat brown in large stock pot and set aside, sauté vegetables in the same pan, the meat will lend its flavor to the veggies.  If not using meat simply sauté the vegetables in coconut oil.  Be sure to lightly salt and pepper both meat and vegetables while browning.  Cook for roughly 7 min on medium heat, or until onions are translucent.
  3. Blend together the tomatoes, sun-dried tomatoes, dates, olive oil and jalapeño if using.  You may have to do this in small batches if it doesn’t fit in you blender.  Also, if your tomatoes aren’t very moist you can add a small amount of water or more olive oil.
  4. Pour blended tomato sauce into pan with sautéed vegetables, return meat to pan if using. Stirring often, add seasonings and allow to bubble for about 7 more minutes before turning heat to low and simmering for as long as you want.  I prefer my sauce to simmer for a couple of hours as it allows the flavors to meld.
  5. Pour atop your favorite noodles.  I prefer DeBoles, Gluten Free, Multi Grain Spaghetti Style Pasta. Serve with our Killer Easy Garlic Bread for dipping, atop chicken Parmesan or your favorite fresh veggie noodles.
